Ingredients
  

  • 2 cups butterscotch chips
  • 1 tsp shortening or vegetable oil
  • 3 cups crunchy chow mein noodles, such as La Choy
  • 1 cup roasted peanuts

Instructions

  • Line baking sheets with parchment paper.
  • Place the butterscotch chips and shortening or oil in a large microwave-safe bowl. Heat on 50% power for 30 seconds, then stir. Repeat, stirring after each 30 seconds until the mixture is melted and smooth.
    2 cups butterscotch chips | 1 tsp shortening or vegetable oil
  • Add the chow mein noodles and peanuts and stir to coat thoroughly.
    3 cups crunchy chow mein noodles | 1 cup roasted peanuts
  • Using 2 spoons, scoop and drop mounds on the prepared baking sheets. Refrigerate until set.
