Chicken Salad With Bacon

Tender chicken, crisp bacon, raisins, and pecans tossed in a creamy lemon-mayo dressing for a fresh twist on chicken salad.

Ingredients
  

  • 2 to 2 1/2 cups cooked diced chicken
  • 2 to 3 tablespoons crumbled cooked bacon
  • 1/3 cup raisins or dried cranberries, craisins
  • 1 rib celery, diced
  • 1/4 cup chopped red onion
  • 2 green onions, thinly sliced
  • 2 to 3 tablespoons chopped pecans, optional
  • 1/2 to 3/4 cup mayonnaise
  • 1 teaspoon lemon juice
  • salt and pepper, to taste

Instructions

  • Mix the ingredients. In a medium bowl, combine the chicken, bacon, raisins, celery, red onion, green onion, and pecans, if using.
  • Dress the salad. Add about 1/2 cup of the mayonnaise and the lemon juice; stir until well blended.
  • Adjust the seasonings. Taste and add more mayonnaise and the salt and pepper, to taste.
