Chicken Bacon Ranch Casserole

Ingredients
  

  • Butter for the baking dish
  • 1 tbsp Kosher salt, for the pasta cooking water
  • 6 ounces farfalle pasta, or similar (I used mini farfalle)
  • 4 strips bacon, diced
  • 2 tsp minced garlic
  • cup heavy cream
  • 4 ounces cream cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp ranch dressing mix
  • ¼ tsp ground black pepper
  • ¾ cup low sodium chicken broth
  • 1 ½ cups diced cooked chicken
  • 2 cups shredded mozzarella cheese, divided
  • 2 tsp chopped parsley, for garnish

Instructions

  • Prepare and measure the ingredients and have them at hand.

  • Grease a 2-quart baking dish and preheat the oven to 350°F.

  • Cook the pasta in boiling salted water following the package directions, drain it, and set it aside.

  • Meanwhile, cook the diced bacon in a large sauté pan or saucepan over medium heat until crisp; transfer to paper towels to drain. Drain off excess fat, leaving about 1 tablespoon in the pan.

  • Add the minced garlic to the drippings and cook for 1 minute. Add heavy cream and cream cheese, whisking for 1 to 2 minutes until the cream cheese is melted and the mixture is smooth. Remove from the heat.

  • Add the Parmesan cheese, ranch dressing mix, pepper, and chicken broth; stir to blend. Add the drained pasta, chicken, and 1/2 cup of mozzarella cheese. Stir until the ingredients are well combined, then transfer to the prepared baking pan.

  • Top the casserole with the cooked bacon and the remaining 1 1/2 cups of mozzarella cheese, and bake for 20 to 25 minutes or until the cheese is lightly browned and the casserole is bubbling around the edges.
