Chicken and Ham Pie

Chicken and ham team up to make a tasty filling for this savory potato-topped pie.

Ingredients
  

  • Butter for greasing the baking dish
  • 6 tbsp butter
  • 1 medium onion, chopped
  • 1 rib celery, chopped
  • ¼ cup flour
  • 2 cups chicken broth
  • ½ tsp dried leaf marjoram or thyme
  • 1 ½ cups frozen peas and carrots (thawed)
  • 3 cups cooked chicken, diced
  • 1 cup ham, diced
  • Fine salt and ground black pepper, to taste
  • 3 cups hot, well-seasoned mashed potatoes

Instructions

  • Heat oven to 425°F. Lightly grease a 2 1/2-quart baking dish.

  • In a medium saucepan, melt 6 tablespoons of butter. Add onion and celery, and cook for 5 to 7 minutes or until softened.

  • Add the flour to the saucepan and stir until blended. Continue to cook, stirring, for 2 minutes. Add the chicken broth and cook, stirring, until thickened.

  • Stir in marjoram or thyme, then add the peas and carrots, chicken, and ham, stirring to combine. Taste and season with salt and pepper.

  • Spoon the mixture into the prepared baking dish. Spoon hot mashed potatoes evenly over the top and spread gently to cover. Put the baking dish on a foil-lined baking pan to catch any drips.

  • Tip: Score or rough up the potato topping with a fork before baking if you want a little more browning and texture.
  • Bake the pie for about 20 to 25 minutes, or until hot and bubbly. To brown the potatoes a little more, turn the broiler on for a minute or two.
