Chicken and Dressing Casserole

Creamy chicken and dressing casserole made with stuffing mix, soup, and chicken. Great as a main dish or holiday side.

Ingredients
  

  • Cooking spray for the baking dish
  • 6 ounces seasoned stuffing mix (bread or cornbread), about 2 cups
  • ½ cup melted unsalted butter
  • 1 (10.5-ounce) can cream of celery soup
  • 1 (10.5-ounce) can cream of chicken soup
  • 2 cups low sodium chicken broth
  • 3 cups diced cooked chicken
  • 1 tsp poultry seasoning
  • Kosher salt and freshly ground black pepper, to taste
  • 1 cup shredded Gruyère or Swiss cheese (optional)

Instructions

  • Heat the oven to 350°F and spray a 2 1/2-quart baking dish with cooking spray.

  • Add the stuffing mixture and butter to a large bowl and mix until well combined.

  • If your stuffing mix has large cubes, crush it lightly before mixing for a more even casserole texture.
  • In a separate bowl, mix the soups, chicken broth, chicken, and poultry seasoning.

  • Pour the soup and chicken mixture into the bowl with the stuffing crumbs and stir to blend. Taste and season with kosher salt and freshly ground black pepper as needed.

  • The soups, broth, and stuffing mix can add plenty of salt on their own, so it’s best to taste the filling first and add salt only if needed.
  • Spoon the chicken and stuffing mixture into the prepared baking dish, then bake for 35 to 45 minutes, or until the top is golden brown, topping with the cheese (if using) the last 5 minutes.

  • Let the casserole rest for 10 minutes before portioning and serving.
