  • Position the oven rack in the center of the oven and preheat to 350°F. Line baking sheets with parchment paper.
  • In a mixing bowl with an electric mixer, beat the butter and granulated sugar until light and fluffy. Add the egg and vanilla; blend until well combined.

  • In a separate bowl, combine the flour, baking powder, and salt. Stir to blend. With the mixer on low speed, mix the dry ingredients into the first mixture.

  • Tip: If your dough feels soft or sticky, refrigerate it for 30 minutes before shaping. This helps the cookies hold their shape and reduces spreading.
  • Scoop portions of dough and gently shape them into smooth, even balls. Coat in extra sugar—regular granulated sugar, sparkling sugar, or demerara all work well.

  • Using the bottom of a glass or your fingers, gently flatten each ball to about ½-inch thickness.
  • Arrange the cookie dough balls on the baking sheets, spacing them about 2 1/2 inches apart. Using the bottom of a glass or your fingers, gently flatten each ball to about ½-inch thickness.
  • Bake for 12 to 14 minutes, or until the bottoms have lightly browned.
