  • Preheat the oven to 350°F and line baking sheets with parchment paper.
  • In a mixing bowl using an electric mixer, cream the butter and 1/2 cup confectioners’ sugar until light and fluffy. Add the salt, vanilla, flour, and chopped pecans to the first mixture; blend well.
    1 cup unsalted butter | ½ cup confectioners' sugar | 1/4 tsp fine salt | 1 1/2 tsp vanilla extract | 2 cups (255 grams) all-purpose flour | 1 1/2 cups finely chopped pecans
  • Cover the bowl and refrigerate for about 1 hour.
  • Scoop some of the dough and shape it into 1-inch balls. Place them on the prepared baking sheets.
  • Transfer the cookies to the oven and bake for 11-14 minutes, or until they are lightly browned on the bottoms. Remove to racks to cool.
  • Sift the remaining 1/2 cup of confectioners' sugar into a bowl. When the cookies are cool enough to handle, roll them in the powdered sugar to coat.
