Butter Pecan Snowball Cookies

Ingredients
  

  • 1 cup butter, softened
  • 1 cup powdered sugar, divided
  • 1/4 teaspoon salt, scant
  • 1 1/2 teaspoons vanilla extract
  • 2 cups all-purpose flour, 9 ounces
  • 1 1/2 cups finely chopped pecans

Instructions

  • Prep the oven and pan. Preheat the oven to 350°F and line baking sheets with parchment paper.
  • Make the cookie dough. In a mixing bowl using an electric mixer, cream the butter and 1/2 cup confectioners’ sugar until light and fluffy.Add salt, vanilla, flour, and chopped pecans to the first mixture; blend well.
  • Chill the dough. Cover the bowl and refrigerate for about 1 hour.
  • Shape the cookies. Scoop some of the dough and shape it into 1-inch balls. Place them on the prepared baking sheets.
  • Bake. Transfer the cookies to the oven and bake for 11-14 minutes, or until they are lightly browned on the bottoms. Remove to racks to cool.
  • Coat with powdered sugar. Sift the remaining 1/2 cup of powdered sugar into a bowl and roll the cookies to coat.
