Burrito Casserole

This baked burrito casserole is a family-friendly, all-in-one meal and quick enough for a weeknight dinner.

Ingredients
  

  • Cooking oil spray for the baking dish
  • 1 tbsp vegetable oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 ½ tsp ground paprika
  • 1 ½ tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp fine salt
  • ½ tsp ground black pepper
  • 1 (15-ounce) can refried beans
  • 6 to 8 medium flour tortillas, cut into strips about 1 1/2 inches wide
  • ½ cup prepared salsa
  • 2 tablespoons coarsely chopped fresh cilantro (optional), plus more for serving, if desired
  • 1 ½ cups shredded cheddar cheese, or pepper jack

Instructions

  • Heat the oven to 350°F and spray a 2 1/2-quart baking dish with cooking oil spray.

  • Heat the oil in a large skillet over medium-high heat. Add the ground beef and onion and cook for 4 to 6 minutes, until the beef is no longer pink. Drain off excess grease, then add the garlic, cumin, paprika, chili powder, garlic powder, fine salt, and black pepper, and cook for 1 minute longer. Stir in the refried beans.

  • Arrange half of the tortilla strips in the prepared baking dish and top with all of the burrito beef mixture, salsa, and cilantro, if using. Top with the remaining tortilla strips and then sprinkle with the cheese. Cover the baking dish with foil. At this point you may refrigerate the casserole overnight.

  • Use a thicker salsa rather than a very watery one so the casserole layers don’t get too soft.
  • Bake the burrito casserole for 15 minutes. Remove the foil and continue to bake for about 5 to 10 minutes, or until the filling is hot and the cheese has melted.
    Note: if it was refrigerated, bake covered for about 25 minutes, then remove the foil and bake until hot and the cheese has melted.

  • Serve with sour cream, guacamole, salsa, chopped cilantro, or sliced green onions, if desired.
