Bisquick Peanut Butter Cookies
These Bisquick peanut butter cookies are a great treat when you crave something sweet. They're easy to make, require minimal cleanup, and taste amazing.
Ingredients
- 1 cup peanut butter
- 1 (14-ounce) can sweetened condensed milk
- 1 ½ tsp vanilla extract
- 1 ¾ cups baking mix, such as Bisquick (210 grams )
- 2/3 cup mini chocolate chips (optional)
- 3 tbsp granulated sugar or sparkling sugar, for rolling

- Heat the oven to 375°F.
- Line baking sheets with parchment paper.
- In a mixing bowl, combine the peanut butter and sweetened condensed milk until smooth. Add the vanilla extract and stir to blend.1 cup peanut butter | 1 (14-ounce) can sweetened condensed milk | 1 1/2 tsp vanilla extract
- Add the baking mix and blend thoroughly, then fold in the chocolate chips, if using. The dough will be quite stiff.1 3/4 cups baking mix | 2/3 cup mini chocolate chips (optional)
- Use a cookie scoop to scoop up the dough and then roll it into small balls. Roll them in the sugar and place them on the prepared baking sheets, leaving about 1 1/2 inches between the cookies. They spread very little.3 tbsp granulated sugar or sparkling sugar
- Dip a fork in granulated sugar and lightly press it onto each ball of cookie dough, making crisscross marks.
- Bake for 7 to 9 minutes, until set.
