Ingredients
  

  • 1 cup peanut butter, smooth
  • 1 14-ounce can sweetened condensed milk
  • 1 1/2 teaspoons vanilla extract
  • 1 3/4 cups baking mix, such as Bisquick (210 grams )
  • 2/3 cup mini chocolate chips, optional
  • 3 tablespoons granulated sugar, for rolling

Instructions

  • Heat the oven to 375 F.
  • Line baking sheets with parchment paper.
  • In a mixing bowl with a wooden spoon, combine the peanut butter and sweetened condensed milk until smooth. Add the vanilla and stir to blend.
  • Add the baking mix and blend thoroughly. The dough will be quite stiff.
  • Use a cookie scoop to scoop up the dough and then roll them into small balls. Roll them in the sugar and place them on the prepared baking sheets leaving about 1 1/2 inches between the cookies. The spread very little
  • Dip a fork in the granulated sugar and lightly press onto each ball of cookie dough, making criss-cross marks.
  • Bake for 7 to 9 minutes, until set.
