This apple cobbler is a divine combination of sliced fresh apples with a cake-like topping. It's a snap to prepare and a sure winner. Top it off with some cinnamon sugar and serve it with a big scoop of ice cream. Caramel sauce would be wonderful!
5medium apples, Granny Smith, Jonathan, or another rather tart variety
1/2cupgranulated sugar
1/4cupbrown sugar, packed
2tablespoonsall-purpose flour
1/2teaspoonground cinnamon
1/4teaspoonsalt
1teaspoonvanilla extract, or vanilla paste
1/4cupwater, or apple juice
1tablespoonbutter

1/2cupall-purpose flour
1/2cupgranulated sugar
1/2teaspoonbaking powder
1/4teaspoonsalt
2tablespoonsbutter, softened
1large egg

Preheat the oven to 375 F. Butter a 9-inch baking dish.
Peel and core the apples. Slice into wedges and then slice the wedges thinly.
In a large bowl, combine the brown sugar and 1/2 cup of granulated sugar with 2 tablespoons of flour, the cinnamon, and 1/4 teaspoon of salt. Add 1 teaspoon of vanilla and 1/4 cup of water. Toss the apple slices into the bowl and stir to blend the ingredients. Turn the apple mixture into the prepared baking dish.
In a mixing bowl, combine the 1/2 cup of flour with 1/2 cup of granulated sugar, baking powder, and 1/4 teaspoon of salt.
In a separate bowl, beat the egg.
Add the beaten egg to the flour mixture along with the softened butter. Beat the mixture until smooth.
Spoon the batter evenly over the apple filling.
Bake the cobbler for about 35 to 45 minutes, or until the apple filling is tender and the topping is golden brown.
