This apple cobbler is a divine combination of sliced fresh apples with a cake-like topping. It's a snap to prepare and a sure winner. Top it off with some cinnamon sugar and serve it with a big scoop of ice cream. Caramel sauce would be wonderful!

  • Preheat the oven to 375°F. Butter a 9-inch square baking dish.

  • Peel and core the apples. Slice into wedges and then slice the wedges thinly.

  • In a large bowl, combine 1/2 cup of granulated sugar with the brown sugar, 2 tablespoons of flour, the cinnamon, and 1/4 teaspoon of salt. Add 1 teaspoon of vanilla extract and 1/4 cup of water (or apple juice). Toss the apple slices into the bowl and stir to combine. Turn the apple mixture into the prepared baking dish and dot with the diced butter.

  • In a mixing bowl, combine the 1/2 cup of flour with 1/2 cup of granulated sugar, baking powder, and 1/4 teaspoon of salt.

  • Whisk the egg in a separate bowl.

  • Add the egg to the flour mixture along with the softened butter. Stir until blended.

  • Spoon the batter evenly over the apple filling. The topping will spread as it bakes.
  • Bake the cobbler for about 35 to 45 minutes, or until the apple filling is tender and the topping is golden brown.
  • Tip: If the topping is browned before the apples are fully tender, tent loosely and bake a bit longer.
