Bacon Cheese Puffs

Ingredients
  

  • ½ cup milk
  • ½ cup water
  • 8 tbsp butter, cut up into small pieces
  • 1 cup all-purpose flour (4 ounces)
  • 4 large eggs
  • 1 cup shredded sharp cheddar cheese
  • cup crumbled cooked bacon or pancetta
  • ¼ cup chopped green onion (optional)
  • ¼ tsp garlic powder
  • ¼ tsp coarsely ground black pepper
  • tsp fine salt

Instructions

  • Heat the oven to 400°F and line 2 large baking sheets with parchment paper.
  • Combine milk, water, and butter in a medium saucepan over medium heat. Bring to a boil.

  • When the water mixture comes to a full boil, add the flour all at once while stirring constantly. Continue cooking and stirring until the mixture forms a dough, pulls away from the sides of the pan, and leaves a light film on the bottom. Remove from the heat.

  • Tip: If you aren't able to weigh the flour, make sure you sift it or fluff it well before spooning it into the 1-cup measure, and then level it off with the back of a knife.
  • Transfer the dough to the bowl of a stand mixer with the paddle attachment. Let it cool for a few minutes, until it is warm but not hot, about 145°F, before adding the eggs.
  • Add the eggs, one at a time, fully incorporating each one before adding the next. The dough may look broken at first, but it will smooth out.

  • Add cheese, bacon or pancetta, green onion (if using), garlic powder, pepper, and salt; mix until blended.

  • Tip: Drain the cooked bacon or pancetta well so extra grease doesn’t weigh down the dough.
  • Drop the dough in 1 1/2-inch mounds onto the baking sheets or pipe it using a large, round tip.
  • If you have any peaks on top of the dough mounds, lightly tamp them down with a dampened finger so they won't burn.
  • Bake for 25 to 30 minutes, or until puffed, deep golden brown, and firm to the touch. Serve warm or at room temperature.
