Ingredients
  

  • 3 green onions
  • 1 tablespoon peanut oil
  • 1 pound ground turkey
  • 1/4 teaspoon black pepper
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons hoisin sauce
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 to 2 teaspoons chili crisp, or Asian chili sauce, such as Sriracha
  • 1/3 cup roasted peanuts, coarsely chopped, divided
  • Lettuce leaves, about 10 to 12

Instructions

  • Slice the green onions thinly, keeping the white and light green parts in separate bowls. Set aside.
  • Heat the peanut oil in a sauté pan over medium heat. Add the ground turkey and break it up into smaller pieces. Let it cook undisturbed for about 2 minutes, then add the chopped yellow onion and continue cooking, stirring frequently, until the onions are translucent and the turkey is no longer pink, about 4 to 5 minutes longer.
  • Add the garlic, ginger, chili crisp, about half of the chopped peanuts, and white parts of the green onions and cook for 3 minutes longer.
  • Add the hoisin sauce, soy sauce, and vinegar and cook for 2 minutes. Taste the mixture and adjust the seasonings and sauces to suit your taste.
  • Serve the turkey on lettuce leaves garnished with the remaining chopped peanuts and green onion tops for a delicious low-carb meal.
