Asian Turkey Lettuce Wraps

Ingredients
  

  • 3 green onions
  • 1 tbsp peanut oil
  • 1 pound ground turkey
  • ¼ tsp black pepper
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 1 tbsp grated ginger
  • 1 to 2 tsp chili crisp or Asian chili sauce, such as Sriracha
  • 6 tablespoons coarsely chopped roasted peanuts, divided
  • 2 tbsp hoisin sauce
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • Butter lettuce or romaine leaves, about 10 to 12 leaves

Instructions

  • Thinly slice the green onions, keeping the white and light green parts separate from the dark green tops. Set aside.

  • Heat the peanut oil in a sauté pan over medium heat. Add the ground turkey and break it up into smaller pieces. Season with the pepper and let it cook undisturbed for about 2 minutes. Add the chopped onion and continue cooking, stirring frequently, until the onion is translucent and the turkey is cooked through, about 4 to 5 minutes longer.

  • Add the garlic, ginger, chili crisp or Sriracha, half of the chopped peanuts, and white parts of the green onions and cook for 3 minutes longer.

  • Tip: Chili crisp adds heat, oil, and a little crunch; Sriracha will make the filling smoother and tangier.
  • Add the hoisin sauce, soy sauce, and vinegar, and cook for 2 minutes. Taste and adjust with more chili crisp, soy sauce, or vinegar, if desired.

  • Spoon the turkey mixture into lettuce leaves and garnish with the remaining chopped peanuts and reserved green onion tops.

  • Tip: Butter lettuce is soft and easy to fold, while romaine gives you a sturdier, crunchier wrap.
