Enhance your garden fresh tomatoes with a simple red wine vinaigrette, and basil. The tomatoes are fantastic on a bed of lettuce or spring greens. Add fresh mozzarella or Parmesan cheese for a lovely luncheon or dinner salad.

- 4 to 6 ripe tomatoes
- sea salt and freshly ground black pepper
- 3/4 cup chopped red onions
- 1/2 cup chopped fresh parsley or basil leaves
- 1/4 cup red wine vinegar
- 1/2 cup extra virgin olive oil
Instructions
- Wash the tomatoes and pat dry.
- Slice the tomatoes thickly.
- Arrange the tomatoes on a serving plate and sprinkle with salt and pepper, chopped onions, and parsley or basil.
- In a bowl, whisk the red wine and vinegar. Drizzle over the tomatoes.
- Serve immediately.
