This flavorful tarragon mayonnaise is a delicious combination of mayonnaise, fresh tarragon, lemon juice and zest, and garlic. Use it as a sandwich spread or serve it with fried seafood, crab cakes, or baked or grilled fish fillets. It’s great with salmon!

- 1/2 cup mayonnaise
- 2 teaspoons fresh finely chopped tarragon
- 1 tablespoon lemon juice
- 1/2 teaspoon finely grated lemon zest
- 1 clove garlic, mashed and very finely minced
- Dash salt
- Freshly ground black pepper, to taste
Instructions
- In a small bowl, combine the mayonnaise, tarragon, lemon juice, zest, and garlic. Blend thoroughly.
- Add salt and freshly ground pepper, to taste.
- Cover and refrigerate for an hour or two for the best flavor.
