This sweet and spicy pineapple sauce is the perfect dip for coconut shrimp. It’s also terrific with chicken tenders or fried shrimp .

- 1/2 cup apricot preserves
- 1/4 cup drained crushed pineapple or finely chopped pineapple slices or fresh
- 1 1/2 teaspoons rice vinegar
- 1 teaspoon chili garlic paste (sambal), or Thai chili sauce (or more, to taste)
- 1/4 to 1/2 teaspoon finely chopped cilantro, optional
- Combine the preserves, pineapple, vinegar, and chili paste. Blend thoroughly.
- If desired add chopped cilantro or divide the dip among smaller bowls and top each with some chopped cilantro.
