Spinach and hard-boiled eggs are baked with a thickened cheddar cheese sauce. Top the casserole with diced crumbled bacon for a smoky flavor.

  • 1 pound frozen chopped spinach,
  • 2 hard-cooked eggs, sliced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground mustard
  • 1 cup milk
  • 3/4 cup shredded Cheddar cheese (3 ounces)
  • 2 strips bacon, cooked and diced, optional
  • paprika, for garnish

Instructions

  1. Thaw the frozen spinach and squeeze as much moisture out as possible.
  2. Preheat the oven to 350 F.
  3. Lightly butter a 1-quart baking dish.
  4. Place the drained spinach in the baking dish; season with salt and pepper. Arrange sliced eggs over spinach.
  5. In a saucepan, melt 2 tablespoons butter; blend in 2 tablespoons flour. Add salt and dry mustard and cook, stirring, for 2 minutes. Gradually stir in milk. Cook, stirring constantly until sauce is thick. Add shredded cheese and stir until melted.
  6. Pour sauce over spinach and eggs; top with diced bacon, if using. Sprinkle with paprika.
  7. Bake for 25 to 30 minutes, or until hot and bubbly.
