These easy black beans are slow cooked to perfection with spicy tomatoes, peppers, and Tex-Mex seasonings.

Ingredients

  • 2 15-ounce cans black beans, drained
  • 1 14.5-ounce cans fire roasted tomatoes or zesty chili style tomatoes, diced
  • 1 4-ounce cans chopped mild green chile
  • 1 cup chopped onion
  • 2 cloves garlic, finely minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried leaf oregano
  • 1/4 teaspoon crushed red pepper, or to taste
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon chopped cilantro, optional

Instructions

  1. Combine drained black beans, fire roasted tomatoes, chile, onion, garlic, cumin, oregano, red pepper, salt, and pepper in the slow cooker insert.
  2. Cover and cook on LOW for 4 to 5 hours.
  3. Stir the cilantro into the beans just before serving.
