Ingredients

Scale
  • 6 tablespoons butter
  • 1 tablespoons parsley (finely chopped)
  • 2 cloves garlic (pressed or finely minced)
  • 1 teaspoon lemon zest (finely grated)
  • 1 tablespoon lemon juice
  • Kosher salt and pepper (to taste)
  • 4 salmon steaks or serving-size fillets
  • 4 tablespoons dry white wine
  • Optional: 2 scallions (chopped)

Instructions

  1. Preheat oven to 400 F. Line a baking pan with foil and spray with nonstick cooking spray.
  2. Melt the butter in a skillet over medium-low heat; add the parsley, garlic, and zest of about half of the lemon. Cook, stirring, for about 30 seconds. Taste and add kosher salt and black pepper. Remove from the heat and set aside.
  3. Arrange the salmon in the prepared pan.
  4. Drizzle 1 tablespoon of wine over each fillet or steak and then spoon some of the butter and parsley mixture over each steak.
  5. Bake the salmon for about 15 minutes, turning once if using steaks, or until fish flakes easily with a fork.
  6. Sprinkle with chopped scallions, if desired.
