This Instant Pot shredded taco seasoned chicken is perfectly cooked in only 14 minutes! Chicken thighs are the best choice for this tender, flavorful shredded chicken. Replacing the chicken thighs with chicken breastswill take less time, approximately 8 to 10 minutes, depending on the size.

Use the shredded chicken to fill tacos, enchiladas, or burritos or sprinkle the seasoned chicken over salads. Top them with some cheese, salsa, guacamole, chopped onions, jalapeño rings, or your favorite toppings.

Ingredients

Scale
  • 1 1/2 pounds chicken thighs (or a combination of chicken breasts and thighs)
  • 1 tablespoon taco seasoning
  • Dash kosher salt
  • Dash pepper

Instructions

  1. Place a trivet in the Instant Pot and add 1 cup of water.
  2. Pat the chicken thighs with paper towels to dry. Season all over with the taco seasoning, salt, and pepper.
  3. Place the chicken thighs on the trivet.
  4. Lock the lid in place and make sure the steam release valve is in the sealing position. Choose pressure cook (or manual on older models) and set the time to 14 minutes. When the time is up, allow a natural release for 10 minutes. Carefully release the remaining pressure.
  5. Remove the chicken pieces to a bowl or tray and chop or shred with 2 forks.
