Ingredients

Scale
  • 1 cup butter (softened)
  • 2/3 cup granulated sugar
  • 1 teaspoon vanilla extract or vanilla bean paste
  • 2 large eggs (room temperature)
  • 1 1/2 cups all-purpose flour (7 ounces)
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350 F. Line baking sheets with parchment paper and set aside.
  2. In a mixing bowl with an electric mixer, beat the butter and sugar until light and fluffy.
  3. Add the egg and vanilla and beat until well blended.
  4. Add the flour and salt. With the mixer on low speed, beat until well mixed.
  5. Bake for 9 to 11 minutes, or until the cookies are lightly browned around the edges.
  6. Remove the cookies to racks to cool.
