Add vanilla or another flavoring to these basic plain muffins. They’re fantastic with chopped nuts or fruit!

Ingredients

  • 1 cup milk
  • 1 large egg
  • 4 tablespoons melted butter
  • 2 teaspoons vanilla or maple extract
  • 2 cups all-purpose flour (9 ounces)
  • 1 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • maple flakes or vanilla sugar, optional

Instructions

  1. Heat the oven to 400 F.
  2. Grease a 12-cup muffin tin or line it with cupcake papers.
  3. In a medium bowl, whisk together the milk, egg, melted butter, and maple or vanilla extract.
  4. In a separate bowl, combine the flour, sugar, baking powder, and salt. Stir to mix thoroughly.
  5. Combine the two mixtures and blend thoroughly.
  6. Spoon the batter into the prepared muffin tins and bake for 15 to 20 minutes, or until set and lightly browned.
