Sweet Potato Casserole

This delicious sweet potato casserole is made with a buttery brown sugar and pecan topping. Serve the casserole with ham, pork chops, or a Christmas or Thanksgiving dinner. If you wish to lighten it a bit, you can cut back on the topping ingredients.

Everyone loves this dish—it's the only sweet potato casserole recipe you need!

Instructions:

  1. Butter a 2-quart baking dish. Heat oven to 350 F.
  2. Mix the mashed sweet potatoes with the granulated sugar, the beaten eggs, milk, 1/2 cup of melted butter, vanilla, and salt. Spoon into the prepared baking dish.
  3. Mix topping ingredients together until well blended. Sprinkle over the potatoes and bake for 30 to 35 minutes.
Time-Saving Tip:
Cook and mash the sweet potatoes a day in advance, and combine the topping ingredients in a separate bowl. Refrigerate until you're ready to prepare the dish and bake.
How to Cook Sweet Potatoes
Use your favorite method to cook the sweet potatoes. To bake them, scrub them thoroughly and arrange them on a foil-lined baking sheet. Poke several holes in them and bake them in a preheated 425 F oven until they are fork-tender, or about 45 to 55 minutes.
To boil sweet potatoes, peel them and cut them into 2-inch chunks. Put them in a large saucepan and cover with cold water with about 1 teaspoon of salt. Bring to a boil and cook for about 15 to 20 minutes, or until tender.
