Old-Fashioned Rice Pudding

Rice pudding.


This old-fashioned rice pudding recipe comes from a 1970s clipping. Add cinnamon if you like, or make it with only the vanilla. It's delicious with or without raisins!

This vanilla pudding is another tasty homemade dessert, or you might like this sweet potato bread pudding.

Instructions:

In a saucepan, combine the rice with the milk; heat to scalding. In a bowl, beat the eggs with the sugar, salt, vanilla, and cinnamon, if using. Stirring briskly, add about one-third of the hot rice mixture to the egg mixture. Pour the rice and egg mixture back into the saucepan; cook, stirring constantly, until thickened. Stir in raisins, if desired, or top with fresh berries.

Serves 4 to 6
