Ingredients

  • Garlic: I like to mash the garlic for this dish. Chop the garlic, then sprinkle a little salt over it and use the flat of a large knife blade and a pushing motion to press it until it’s mashed.
  • Chili Crisp or Chili Crunch: This is a blend of chilis and oil. It’s a wonderful condiment, but use it sparingly depending on your heat tolerance.
  • Soy Sauce: Use low sodium (lite) soy sauce.
  • Oyster Sauce: Oyster sauce adds savory, umami notes and with a hint of sweetness. It’s a seasoned sauce that contains oyster flavoring or extracts.
  • Sesame Oil: I use toasted sesame oil. All you need is 1 1/2 teaspoons to balance the flavors nicely.

  • 8 ounces thin spaghetti
  • 1 tablespoon vegetable oil
  • 6 green onions, thinly sliced (set some of the dark green aside for garnish)
  • 2 teaspoons minced and mashed garlic
  • 1/2 teaspoon chili crisp, more or less
  • 1 tablespoon light brown sugar
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon oyster sauce
  • 1 1/2 teaspoons sesame oil

Instructions

  1. Cook the spaghetti in a pot of boiling salted water following the package directions. Add 1 teaspoon of kosher salt for each quart of water.
  2. While the pasta is cooking, heat the vegetable oil in a small skillet over medium heat. Add the green onions, garlic, and chili crisp. Cook, stirring, until the mixture is aromatic, about 1 to 2 minutes.
  3. Transfer the green onion mixture to a small bowl and let it cool slightly. Add the brown sugar, soy sauce, oyster sauce, and sesame oil.
  4. Drain the spaghetti and transfer it to a serving bowl. Add the garlic sauce mixture and toss to blend thoroughly.
  5. Garnish with green onion tops and serve hot.
