Line a large rimmed sheet pan—you might need two—with nonstick foil. Oil or spray the foil with cooking spray if it isn’t nonstick. Alternatively, fit a cooling rack in the pan.
Arrange the bacon in the pan or on the rack and bake for about 25 to 35 minutes, until golden brown and crisp.
Remove the bacon to paper towels to drain.
Pour the grease off into a jar or container and refrigerate or freeze.
