Impress your guests with these flavorful orange-glazed carrots. Made with Cointreau liqueur, marmalade, and butter, they’re perfect for holiday feasts.

  • 3 tablespoons butter
  • 1 pound baby carrots, or peeled carrots, cut into 1/4– to 1/2-inch diagonal slices
  • 3 tablespoons sweet orange marmalade
  • 6 tablespoons Cointreau liqueur
  • Pinch fresh ground black pepper, optional
  • Fresh chopped parsley, for garnish, optional

Instructions

  1. In a heavy skillet over medium heat, melt the butter. Add the carrots and stir to coat with the melted butter. Add the marmalade to the skillet and cook, stirring, until the marmalade is melted. Add the Cointreau and bring to a boil. Reduce heat, cover, and simmer for 5 minutes.
  2. Remove the cover and continue cooking until the carrots are tender and the liquids have reduced to form a glaze on the carrots.
  3. Transfer to a serving dish and sprinkle with a little pepper, if desired, and fresh chopped parsley.
