One-Egg Banana Bread

Make this easy, moist banana bread with ripe bananas, one egg, and butter. If you don’t like nuts in banana bread, leave them out or replace them with dried fruit or chocolate chips.

  • 3 large ripe bananas (1 1/2 cups, mashed)
  • 1 large egg
  • 1 cup sugar, granulated or brown sugar
  • 4 ounces butter, melted and slightly cooled
  • 1 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350 F.
  2. Grease and flour a 8 1/2-by-4 1/2-inch loaf pan
  3. In a mixing bowl with an electric mixer, combine the mashed bananas, sugar, egg, and melted butter.
  4. In a separate medium bowl, combine the flour, salt, and baking soda; whisk to blend.
  5. Stir the dry ingredients into the first mixture until just blended.
  6. Fold in chopped nuts, if using.
  7. Spoon the mixture into the prepared loaf pan; spread evenly.
  8. Bake for 53 to 58 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs.
