Celebrate Derby Day with this classic Kentucky pie! It’s filled with chocolate chips and walnuts along with optional bourbon, and it’s super easy to make and bake.

Ingredients

  • 1 unbaked 9-inch pie pastry
  • 1 cup semisweet chocolate chips
  • 3/4 cup chopped walnuts or pecans
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 4 ounces (1/2 cup) butter, melted, cooled slightly
  • 2 teaspoons vanilla extract
  • 1 or 2 tablespoons good quality Kentucky Bourbon, optional

Instructions

  1. Sprinkle the chocolate chips and walnuts in the unbaked pie crust.
  2. In a mixing bowl, combine the light brown and granulated sugars with the eggs, flour, melted butter, and vanilla. Whisk until the mixture is smooth and well blended. If desired, whisk in the bourbon.
  3. Pour the filling mixture over the chocolate chips and nuts.
  4. Bake the pie for about 40 to 50 minutes, or until the filling is set and the crust is browned.
  5. Serve with whipped cream or frozen thawed whipped topping or serve it warm with a big scoop of ice cream.
