Ingredients

  • 2 1/2 to 3 pounds bone-in chicken breasts (4 split chicken breasts)
  • Kosher salt (to taste)
  • Ground black pepper (to taste)
  • Seasoning blend (to taste)
  • 1 cup chicken stock

Instructions

  1. Pat the chicken with paper towels to dry.
  2. Sprinkle the chicken breasts with kosher salt, pepper, and a seasoning blend (e.g., Cajun or Creole, taco seasoning, Za’atar, herbes de Provence, etc).
  3. Place the trivet in the Instant Pot and add 1 cup of chicken stock (you may use water, if desired).
  4. Lock the lid in place and turn the valve to the sealing position. Select pressure cook (or manual), high pressure, and set the time for 10 minutes.
  5. When the time is up, allow the pressure to release naturally for 10 minutes, then carefully turn the valve to the venting position to release the remaining pressure.
  6. Meanwhile, preheat the broiler and line a baking pan with foil.
  7. Place the cooked chicken on the prepared baking pan, skin side up.
  8. Broil the chicken breasts for 4 to 6 minutes, or until the skin is browned.
