1 jar (approx. 6 to 8 ounces) marinated artichokes, drained and coarsely chopped
1/2 cup diced red bell pepper
1 can (4 ounces) sliced black olives
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon lemon juice
3 tablespoons sour cream
1/2 cup mayonnaise, or to taste
Instructions
Cook the pasta in boiling salted water following the package directions. Drain well and set aside.
Combine the ham, scallions, artichokes, bell pepper, olives, parsley, salt, pepper, lemon juice, sour cream, and 1/2 cup of mayonnaise. Add the drained pasta to the ham and vegetables and then toss to coat thoroughly.
