Try this easy ham and bean casserole for a tasty and satisfying meal. It’s versatile and can be made with or without ham.

  • 2 tablespoons unsalted butter
  • 1 1/2 to 2 cups cubed cooked ham
  • Salt and pepper, to taste
  • 1/2 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 tablespoon brown sugar
  • 1/2 teaspoon dry mustard
  • 1 16-ounce can pinto beans, drained (or kidney beans)
  • 1 16-ounce can lima beans, drained
  • 1/4 cup ketchup
  • 2 tablespoons red wine vinegar or cider vinegar

Instructions

  1. Heat the oven to 350 F.
  2. Melt the butter in a skillet over medium heat. Add the ham to the skillet and sauté until lightly browned. Sprinkle lightly with salt and pepper. Remove the ham to a plate and set aside.
  3. Add the onion to the skillet and sauté for 3 to 4 minutes, stirring frequently. Add the garlic and cook for 1 minute longer.
  4. Add the brown sugar, mustard, beans, ketchup, and vinegar to the pan. Stir to blend and bring to a simmer.
  5. Transfer the beans to a 1 1/2-quart baking dish and arrange the browned ham over the top.
  6. Cover the pan tightly with foil and bake for 30 minutes.
  7. Serve the beans with cornbread, biscuits, or crusty French bread.
