- 2 large acorn squash
- 1/2 cup orange juice
- 1/2 cup firmly packed light brown sugar
- 1/4 cup light corn syrup
- 1/2 cup melted butter
- 2 to 3 teaspoons grated orange zest
- 1/4 teaspoon salt
- Preheat the oven to 350 F.
- Butter a large, shallow baking pan.
- Trim ends from squash; cut crosswise into 1/4-inch thick rounds. Remove any seeds and membranes. Arrange the rings in the baking pan.
- Add orange juice to the squash rings in the baking pan.
- Cover the pan with foil and bake the squash for 30 minutes.
- In a bowl, combine the brown sugar, corn syrup, melted butter, orange zest, and salt; pour over squash rings.
- Continue baking, uncovered, for about 15 to 20 minutes, and basting occasionally until acorn squash is tender and nicely glazed.
