French Toast Casserole for Two

Enjoy a decadent breakfast with our French toast casserole for two. Made with brown sugar, cinnamon, and vanilla, it’s the ultimate morning delight.

Our French toast casserole for two is the perfect breakfast for two or three people. The casserole makes delicious breakfast or brunch, and it’s especially easy because it’s made in one dish. It’s a delightful way to transform leftover bread into a golden, custardy dish. Brown sugar, cinnamon, and vanilla flavor the dish, and a maple syrup drizzle adds to the decadence.

The secret to this casserole’s creamy, custard-like texture lies in the milk and egg mixture that binds everything together. As the bread soaks up this rich custard, it softens and absorbs the flavors beautifully, ensuring every bite is moist and satisfying. We used leftover dinner rolls, which worked wonderfully, but any day-old bread—biscuits, brioche, challah, or rustic French loaf—can be used for different textures and flavors.

The caramel-like base created by melting butter and brown sugar together makes this dish irresistible. Combined with a generous amount of cinnamon for warmth and vanilla for sweetness, the flavors meld perfectly.

Whether served as a comforting breakfast centerpiece or a cozy dessert, this French toast casserole is easy to prepare and impossible to resist. It’s a heartwarming way to repurpose leftover bread or rolls into something special—a dish your family will repeatedly request.

Recipe Variations

  • Add raisins, dried cranberries, or other dried fruit to the egg mixture.
  • Instead of cinnamon, flavor the egg mixture with a pumpkin spice or apple spice blend.
  • Serve the French toast casserole with a fruit sauce, caramel, or compote instead of maple syrup.
