Easy Turkey Curry

A quick, flavorful turkey curry made with leftover turkey, coconut milk, and warm spices. Ready in just 30 minutes and perfect with rice or naan.

  • 2 tablespoons ghee
  • 1 large onion, finely chopped
  • 2 teaspoons grated garlic
  • 1 tablespoon grated ginger
  • 2 tablespoons curry powder
  • 1 teaspoon garam masala
  • 1 teaspoon ground coriander
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon tomato paste
  • 1 cup chicken stock
  • 1 13 1/2-ounce can coconut milk
  • 3 cups diced leftover turkey
  • Fresh sliced green onions or cilantro for garnishing

Instructions

  1. Sauté the aromatics. Heat the ghee in a sauté pan or Dutch oven over medium heat. Add the onion and sauté for 4 minutes, then add the garlic and ginger. Cook for an additional 2 minutes, then add the curry powder, garam masala, coriander, cinnamon and tomato paste. Stir to blend.
  2. Add the liquids and turkey. Stir in the chicken broth and coconut milk and simmer 3 minutes. Add the turkey to the pot and reduce the heat to low. Cook for 5 to 7 minutes or until the sauce has thickened slightly.
  3. Serve. Spoon the turkey curry over rice and garnish with sliced green onions or cilantro.
