Easy Spiced Oven-Fried Chicken

Oven-fried chicken breasts (or chicken tenders) are flavored with honey, lime juice, and Tex-Mex seasonings. Add this easy recipe to your weeknight meal calendar!

  • 4 boneless chicken breast halves  (1 1/2 pounds)
  • 2 tablespoons local honey
  • 1 tablespoon fresh lime juice
  • 1 1/2 teaspoons finely grated lime zest
  • 1 teaspoon kosher salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon freshly ground black pepper
  • dash cinnamon (or allspice)
  • dash cayenne pepper
  • 1 1/2 cups fine dry bread crumbs
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon vegetable oil or melted butter

Instructions

  1. Preheat the oven to 425 F.
  2. Combine honey, lime juice and zest, salt, chili powder, cumin, pepper, cinnamon or allspice, and cayenne in a large shallow bowl.
  3. In another large bowl, combine the bread crumbs, chopped cilantro, and vegetable oil or melted butter. Toss to blend thoroughly
  4. Dip the chicken pieces in the honey mixture, turning to coat well.
  5. Dip the honey-coated chicken into the bread crumb mixture and coat, gently pressing the crumbs onto the chicken.
  6. Transfer the chicken to a foil-lined baking pan. Bake at 425 F for 20 to 30 minutes, or until chicken reaches 165 F and it is browned and juices run clear.
