Instant Pot Pork Chops

These pork chops are super easy to season and cook in the Instant Pot pressure cooker. Just season, sear, and then pressure cook. All in all, the recipe takes about 35 minutes from start to finish.

Ingredients

  • 4 boneless pork chops (1-inch thickness)
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 1/2 cups chicken stock
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon liquid smoke

Instructions

  1. Pat the pork chops with paper towels to dry.
  2. Combine the salt, pepper, chili powder, onion powder, and garlic powder; rub the seasoning mixture over the chops.
  3. Select the sauté button on the Instant Pot and add the olive oil and butter. When the display indicates the pot is hot, add the pork chops and sear for about 2 minutes on each side. Alternatively, sear the pork chops in a skillet on the stovetop.
  4. Remove the chops to a plate and add add the chicken stock, Worcestershire sauce, and liquid smoke to the pot. Scrape up any browned bits on the bottom of the pot.
  5. Add the pork chops to the liquids and cancel the sauté function.
  6. Place the lid on the pot and turn the valve to the sealing position. Choose the pressure cook or manual button (high pressure), and set the time for 8 minutes.
  7. When the time is up, let the pressure come down naturally for 10 minutes and then carefully turn the valve to the venting position to release the remaining pressure.
