This is an excellent fresh cucumber salsa, a refreshing side that goes well with fish, salmon croquettes, and chicken.

Scale
  • 1 medium cucumber, seeds scooped out, diced
  • 3/4 cup corn kernels, fresh or frozen (thawed)

  • juice of 1 lime, about 3 tablespoons
