2/3 cup finely chopped ham (or 1/3 to 1/2 cup of diced cooked bacon)
1/4 cup finely chopped bell pepper, optional
Vegetable oil for deep frying
Instructions
Heat the oil to 365 F.
In a mixing bowl, whisk the eggs with the milk. Stir the cream-style corn into the egg mixture.
In another bowl, combine the flour, baking powder, and salt; stir to blend. Add the dry ingredients to the first mixture and stir to blend. Fold in the chopped ham or bacon along with bell pepper, if using.
With a tablespoon of cookie scoop, drop the batter into the oil and cook until golden brown.
Serve the fritters hot with applesauce, syrup, or a dip.
