Chocolate Meringue Cookies

These easy meringue cookies are relatively light — the only fat in the cookies comes from the melted chocolate and walnuts.

Ingredients

  • 3/4 cup (4 ounces) semisweet chocolate chips
  • 2 large egg whites, room temperature
  • 1/4 teaspoon salt
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup finely chopped pecans or walnuts

Instructions

  1. Melt the chocolate chips in a bowl over simmering water or in the microwave oven. Set aside to cool.
  2. Preheat the oven to 325 F.
  3. Grease baking sheets or line with parchment paper.
  4. In a mixing bowl with an electric mixer, beat the egg whites until foamy; beat in the salt. Gradually beat in the sugar and continue beating on high speed until very thick and the mixture holds stiff peaks. Fold in the vanilla and the cooled melted chocolate. Fold in nuts.
  5. Use a tablespoon or scoop to drop the mixture onto the prepared baking sheets.
  6. Bake for about 9 or 10 minutes, until firm and set but still soft.
  7. Makes about 2 dozen cookies.
