A chocolate cake mix makes these chocolate cake mix cookies a snap to mix and bake. Oats and chocolate chips add to their flavor and texture.

Ingredients

  • 1 box chocolate fudge cake mix (2-layer size, 15.25-ounce)
  • 1/2 cup quick oats
  • 1/2 cup vegetable oil, such as Canola or corn oil
  • 2 large eggs
  • 3/4 cup toffee or brickle chips
  • 3/4 cup chopped walnuts or pecans, optional

Instructions

  1. Heat oven to 350 F.
  2. Lightly grease a baking sheet.
  3. In a mixing bowl with an electric mixer, combine the cake mix with the oats, oil, and eggs; beat on low speed just until moistened. Beat on high speed for a few seconds to blend thoroughly.
  4. Fold in the toffee chips and chopped nuts.
  5. Drop on the prepared baking sheet from a teaspoon or cookie scoop, leaving about 2 inches between cookies.
  6. Bake for 10 to 12 minutes.
  7. Let the cookies cool for 1 minute in the pan. With a spatula, carefully remove them to a rack to cool completely.
