Fried BBQ Chicken Wonton Appetizer

These crispy little wonton bites have a delicious surprise inside—perfectly seasoned chicken with barbecue sauce!

Ingredients

  • 1 cup cooked diced chicken
  • 3/4 teaspoon Cajun seasoning (or a chicken grill seasoning)
  • 3 scallions, finely chopped
  • 1/4 teaspoon salt
  • Dash black pepper
  • 3 tablespoons purchased or homemade barbecue sauce
  • 28 wonton wrappers (more or less)
  • Oil for deep frying
  • Barbecue sauce for dipping

Instructions

  1. Heat the oven to 200 F. This is to keep the wontons warm while you fry subsequent batches
  2. Place a rack on a rimmed baking sheet.
  3. Mince the chicken and put it in a bowl. Add the Cajun seasoning, chopped scallions, and salt and pepper along with the 3 tablespoons of barbecue sauce; mix well to combine.
  4. Mound 1 teaspoon of the chicken mixture in the center of a wonton wrapper. Lightly dab water all around the edge of the wrapper. Fold the wonton over and press the edge all around to seal or follow instructions on the wonton wrapper insert for folding.
  5. Keep the filled wontons covered with a damp dish towel to keep them from drying out, and keep the unused wrappers covered.
  6. Heat oil in a deep fryer or deep, heavy saucepan or Dutch oven to 370 F.
  7. Fry the filled wontons, about 4 to 5 at a time, until golden brown. Remove the fried wontons to a paper towel-lined plate to drain. Transfer to the rack in the baking pan and transfer to the 200 F oven to keep warm.
  8. Serve with barbecue sauce.
  9. Makes about 24 to 30 appetizers.
