Chicken Breasts With Tomatoes and Mushrooms (Easy Recipe)
These simple skillet chicken breasts are cooked quickly with a flavorful tomato and mushroom sauce. Some wine flavors the sauce along with garlic and seasonings.
Fresh mushrooms and tomatoes make a fabulous sauce for these easy skillet chicken breasts. Minced garlic and a splash of white wine add to the flavors.
Chicken Breasts With Tomatoes and Mushrooms (Easy Recipe)
Ingredients
- 4 boneless chicken breast halves, without skin
- 6 tablespoons flour, divided use
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 2 tablespoons olive oil
- 8 to 12 ounces sliced fresh mushrooms
- 1 clove garlic, finely minced
- 1 can, 14.5 ounces diced tomatoes, undrained
- 1/4 cup dry white wine
- 3/4 cup chicken broth
Instructions
- Pat the chicken breasts dry with paper towels. Pound between sheets of plastic wrap to an even thickness.
- Combine 4 tablespoons flour with 1/2 teaspoon salt and the pepper. Dredge chicken breasts to coat.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken to the hot oil and brown for about 3 minutes on each side. Add sliced mushrooms and sauté for 1 minute longer.
- Meanwhile, in a small bowl, combine the garlic, tomatoes, wine, and chicken broth; stir in the remaining 2 tablespoons of flour until well blended. Pour the mixture over the chicken and mushrooms; stir to combine and bring to a simmer. Reduce heat to low and simmer for about 12 to 15 minutes, or until the chicken is thoroughly cooked.
- Serve the chicken with the sauce.
