Melt-in-your-mouth butter pecan cookies rolled in powdered sugar. Only 6 ingredients and ready in 30 minutes!

  • 1 cup butter (softened)
  • 1 cup powdered sugar (divided)
  • 1/4 teaspoon salt (scant)
  • 1 1/2 teaspoons vanilla extract
  • 2 cups all-purpose flour (9 ounces)
  • 1 1/2 cups finely chopped pecans

Instructions

  1. Prep the oven and pan. Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. Make the cookie dough. In a mixing bowl using an electric mixer, cream the butter and 1/2 cup confectioners’ sugar until light and fluffy.
    Add salt, vanilla, flour, and chopped pecans to the first mixture; blend well.
  3. Chill the dough. Cover the bowl and refrigerate for about 1 hour.
  4. Shape the cookies. Scoop some of the dough and shape it into 1-inch balls. Place them on the prepared baking sheets.
  5. Bake. Transfer the cookies to the oven and bake for 11-14 minutes, or until they are lightly browned on the bottoms. Remove to racks to cool.
  6. Coat with powdered sugar. Sift the remaining 1/2 cup of powdered sugar into a bowl and roll the cookies to coat.
