  • 1 bunch bok choy, or about 1 1/2 to 2 pounds
  • 1 clove garlic, minced
  • 2 to 3 tablespoons butter
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice
  • 2 to 3 tablespoons crumbled cooked bacon
  • Kosher salt and freshly ground black pepper, to taste

Instructions

  1. Wash bok choy; cut into 1-inch pieces.
  2. Melt butter in a large saucepan over medium heat; add the bok choy and garlic. Saute for 2 minutes, stirring frequently.
  3. Add the chicken stock, lemon juice, crumbled bacon, and seasonings, to taste.
  4. Cover and simmer over low heat for 10 to 15 minutes, until tender.
  5. Taste and adjust seasonings.
