Make this blueberry buckle and serve it as a coffee cake for breakfast or brunch, or serve it as a dessert with a scoop of ice cream. This is one of my favorite blueberry recipes!

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons butter, softened
  • 1/2 cup granulated sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1/3 cup milk
  • 1 1/2 cups fresh blueberries (thawed and drained if frozen)
    Crumb Topping
  • 1/2 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 4 tablespoons butter, softened
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Heat the oven to 350 F.
  2. Butter an 8-inch square baking dish.
  3. In a bowl, combine the 1 1/4 cups of flour with the baking powder and salt; mix to blend. Set aside.
  4. In a mixing bowl, beat 4 tablespoons of butter with 1/2 cup of granulated sugar until fluffy; add the egg and vanilla and beat until blended.
  5. Add the flour mixture to the batter along with the milk. Beat just until smooth.
  6. Spread the batter in the prepared baking dish. Sprinkle the blueberries evenly over the top.
  7. In another bowl, combine the crumb topping ingredients; mix until crumbly and then sprinkle the crumbs over the berries.
  8. Bake in the preheated oven for about 35 to 45 minutes, or until a wooden pick or cake tester inserted in center comes out clean.
