This beef and bean casserole is an all-in-one dish that makes an excellent dinner for any night of the week.

Ingredients

  • 1 pound lean ground beef
  • 1 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1 teaspoon salt, or to taste
  • 1 can (16 ounces) pork and beans
  • 2/3 cup barbecue sauce
  • 2 tablespoons brown sugar
  • 1 can frozen or refrigerator biscuits
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat the oven to 350 F.
  2. In a large skillet over medium heat, brown ground beef with the onion and bell pepper until the beef is no longer pink and the onion is translucent. Drain and discard excess fat. Add salt, pork and beans, barbecue sauce, and brown sugar; heat until hot and bubbling.
  3. Pour the beef and bean mixture into a 2-quart baking dish. Separate biscuits; cut in half.
  4. Place the biscuits over the top of the casserole. Sprinkle with the shredded cheese.
  5. Bake the casserole for 25 to 30 minutes, until hot and bubbly and the biscuits are browned.
