American chop suey is one of America’s favorite comfort foods. Add this tasty pasta and ground beef dish to your mealtime roundup.

Ingredients

  • 8 ounces macaroni, cooked and drained
  • 1 tablespoon vegetable oil
  • 1 cup chopped onion
  • 1 pound lean ground beef
  • 1/2 cup chopped green bell pepper
  • 2 cans (14.5 ounces each) tomatoes
  • Kosher salt and freshly ground black pepper, to taste
  • 1 teaspoon chili powder
  • Shredded cheese, for garnish, optional

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and cook for about 2 minutes, stirring frequently. Add the ground beef and bell pepper continue cooking until the beef is no longer pink. Drain off excess fat.
  2. Add tomatoes to the skillet along with salt, pepper, and chili powder. Reduce heat; simmer for 10 to 15 minutes.
  3. Meanwhile, cook the macaroni following package directions.
  4. Add the drained macaroni to the tomato and beef mixture and blend well.
  5. Garnish with shredded Parmesan or cheddar cheese, if desired.
