Simple Baked Potatoes

These simple baked potatoes make an easy, fuss-free side dish you can serve with just about any main protein. Dress them up with garnishes or leave them plain.

Ingredients

  • 2 pounds baking potatoes, peeled and thinly sliced, about 1/8-inch thickness
  • 2 teaspoons olive oil for coating the potatoes
  • Kosher salt (optional)
  • 3 tablespoons butter (for serving)
  • Optional garnishes: sour cream, chopped fresh parsley, shredded cheese, crumbled cooked bacon

Instructions

  1. Scrub the potatoes and pat dry. Rub the potatoes with the olive oil and sprinkle with kosher salt, if desired. Prick the potatoes in several places with a sharp fork or skewer.
  2. Arrange the potatoes on the oven rack and bake for 1 hour to 1 hour and 15 minutes, or until the potatoes are fork-tender. Squeeze them or prick with a fork to test for doneness.
  3. Serve the baked potatoes with butter and your favorite garnishes. Enjoy!
