Simple Baked Potatoes

These simple baked potatoes make an easy, fuss-free side dish you can serve with just about any main protein. Dress them up with garnishes or leave them plain.

Ingredients

  • 2 pounds baking potatoes, peeled and thinly sliced, about 1/8-inch thickness
  • 2 teaspoons olive oil for coating the potatoes
  • Kosher salt (optional)
  • 3 tablespoons butter (for serving)
  • Optional garnishes: sour cream, chopped fresh parsley, shredded cheese, crumbled cooked bacon

Instructions

  1. Heat the oven to 400 F (200 C).
  2. Scrub the potatoes and pat dry. Rub the potatoes with the olive oil and sprinkle with kosher salt, if desired. Prick the potatoes in several places with a sharp fork or skewer.
  3. Arrange the potatoes on the oven rack and bake for 1 hour to 1 hour and 15 minutes, or until the potatoes are fork-tender. Squeeze them or prick with a fork to test for doneness.
  4. Serve the baked potatoes with butter and your favorite garnishes. Enjoy!
