Chicken and Rice Pilaf With Creole Flavors

This rice dish is a flavorful all-in-one skillet meal, and it’s a breeze to prepare. The classic surf and turf combination of chicken and shrimp makes for a fabulous meal. Cook the rice in a low sodium chicken broth for extra flavor.

The ingredients include Creole-style aromatics and tomatoes, with Worcestershire sauce adding its umami flavor.

Serve the rice with garlic bread or a crusty French bread.

Recipe Variations

  • Protein: Instead of chicken, use 8 ounces of sliced and lightly browned andouille sausage.
  • Seasonings: Add a dash of Creole seasoning for even more Louisiana flavor. Or make it spicy with a dash of hot sauce, cayenne, or crushed red pepper flakes.
  • Vegetables: Sauté sliced mushrooms with the vegetables.

Ingredients

Scale
  • 6 strips bacon
  • 2 cups cooked rice
  • 2 tablespoons butter
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1 pound shrimp, peeled, deveined, coarsely chopped if large
  • 1 1/2 cups diced cooked chicken
  • 1 can (14.6 ounces) diced tomatoes
  • 1 teaspoon Worcestershire sauce
  • sliced green onion tops, for garnish, optional
  • salt and pepper to taste

Instructions

  1. Cook the bacon until crisp; drain on paper towels. Crumble and set aside.

     

  2. Leave 1 tablespoon of bacon drippings in the skillet and add the butter.

     

  3. Place the skillet over medium heat. Add the celery, onion, and bell pepper. Cook the vegetables, stirring frequently, until vegetables are tender.

     

  4. Add the shrimp, chicken, Worcestershire sauce, and tomatoes to the skillet. Cook the mixture for about 5 to 7 minutes, or until the shrimp is cooked through.

     

  5. Add the rice and crumbled bacon to the skillet and mix thoroughly.

     

  6. Add salt and pepper to taste; heat through.

     

  7. Garnish with sliced green onion tops, if desired.
